What are some good Cuban and Spanish cookbooks? What authors do you recommend?

I want something authentic. I can cook and don’t mind spending some hours in the kitchen. I want good traditional recipes – not quasi watered down recipes for weaklings.

I have Cocina Criolla which is the bible of Cuban cookbooks but it’s in Spanish and my Spanish is rusty. I need a book that’s in English. Penelope Casas is suppose to be the best Spanish author for cookbooks but what are some other books/authors you would recommend? I’m also interested in Catalan cooking (Spain) or a book that specializes in Paella.

I love the Catalan cuisine. For several years I vacationed in the Barcelona area when I was still living in Germany.

Here in US I found those two books and I love them
